Their public tastings allow you to sample small plates and Italian sodas made with their unique oils and vinegars, to learn how to taste olive oils and what to look for in buying oils, to discover fresh ideas and recipes using oil and vinegars, and to receive a 15% discount on your purchase. Evoolution sources their olives from the northern hemisphere in the fall and the southern hemisphere in the spring to harvest the freshest oils in the world. They only use freshly crushed olives (within four hours of picking) with a crush date stamped on each bottle and the Evoolution team fuses and infuses their oils and vinegars and bottles them onsite.
