What Makes Pampa’s Salad Bar So Special
Like the Mediterraneans, Brazilians favour meals with multiple courses and tend to eat their biggest meal mid-day, which is what makes Pampa’s salad bar such an integral part of the Pampa experience. And in the Pampa region, salads, veggies, and pasta, together with rice and beans (of course) form the foundation of any meal. That said, our salad bar is intentionally modeled after a Brazilian street market called a feira – in both size and variety. In Brazil, every neighbourhood hosts a farmers’ market at least weekly, and the ambiance is frenetic and yet comforting, with throngs of cheerful, happy people selling food and wares, playing music, laughing and socializing, basking the camaraderie of community.
Brazilian feiras are known for their fruit harvests: an abundance of locally grown Gala and Fuji apples, guava, atemoya and mangoes and melons, bananas, starfruit, and pineapple – all cut to showcase the freshness and offer samples. At Pampa, we mimic these offerings where possible and pair them with an even more generous complement of vegetables and greens – fresh, roasted, pickled, and baked. Feiras in the Pampa region are also known for seafood, meats, cheeses, breads, sweets, and plenty of rice and beans. Given our dedication to authenticity and capturing the Brazilian spirit in our restaurant’s décor, atmosphere, layout, and cuisine, our salad bar reflects these ideals by providing a bounty of both local and imported goods, all the freshest and highest quality.
And at Pampa, we’re all about inclusivity: we want people of varying backgrounds, palates, experiences, and dispositions to revel in our food, to bask in its pleasure and nourishment (there’s a reason we call it an “All You Care to Indulge” concept). It’s fitting then, that our salad bar is as vast and varied as any farmers’ market (Canadian or Brazilian) and offers both authentic Brazilian and Western fare.
Beginning with hot accompaniments, our salad bar provides Brazilian staples like rice and feijoada as well as beef lasagna, coconut milk mashed potatoes, and a variety of roasted and sautéed vegetables. Next up, are fresh, in-house baked breads (including fruit breads and coffee cakes) and our infamous Pão de Queijo, gooey, gluten-free Brazilian cheese buns. From there, you’re guided toward our exclusive, in-house salad offerings: beef penne salad, fusilli grape salad, quinoa salad, pineapple sausage salad, potato salad, chicken salad, radicchio salad, and calamari mango salad. A charcuterie of artisanal meats and cheeses (including olives, pickles, and hummus) await you as well as crisp greens and raw veggies to build your own salads along with house made dressings and Evoolution oils and vinegars.
